Tomato and Herb Salad with Goats Cheese

  1. Combine the oil, vinegar and sugar in a jug and season.
  2. Place the tomatoes in a large shallow bowl and drizzle with the dressing.
  3. Set aside for 20 minutes to let the flavours develop.
  4. Transfer the tomatoes to a platter.
  5. Crumble over the goats cheese and scatter with herbs.
  6. Drizzle with a little dressing and serve topped with herbs.
